Different Type of Sake
JunmaiThe name junmai means “pure rice” in japanese. Junmal sake is brewed using only rice, water, koji, & yeast, withoutadding any alcohol, spirits, or other additives. Junmai offer more of everything.More acidity-sour, tangy flavors-more body, & more amino acids than in most other alcoholic drinks. This gives junmai the richness of flavor.
GinjoGinjo is sake made w/ rice polished to the extent that the outer 40% (at least) of each grain has been ground away. Extra care is taken not to crack the rice grains during polishing. Fermentation proceeds at lower temperature & for longer periods. This extra effort produces a sake that is layered & complex, lighter & more fragrant.
Dai-GinjoDal-ginjo is a sub-classification of ginjo, in which at least 50% of each grain of rice has been polished & the various brewing process are handled w/ even more care & attention. Dal-ginjo sake are lighter in body, have more fragrance & fruitier than ginjo sake.
