It was great...So crowded now regardless what time you go – I agree with the previous reviewer, the last head chef was a lot better. I used to go there every friday at lunch to have ramen, but since the change of the new head chef I havent gone as much. The problem with the new head chef is that he does not shake out all the water out of the ramen, thus making the ramen soggy and the broth watered down when he prepares it. I would always get strong soup base, heavy oil and hard ramen, but now it taste like light soup base, light oil and soft ramen. Since the broth taste watered down I cant seem to taste the buttery and porky flavor as much as before.
Forget coming in for more than 4 people, it takes more than an hour to get seated if you bring a lot of people.
It used to be good, but not anymore! – I used to lunch at this place frequently before because I liked their Udon a lot. But, my last few visits turned out not so impressive.
Best in the West – Hakata Ramen as it should be. Fast, hot, tasty, with more available. The service at this place is nearly identical to that in Japan. The noodles are prepared correctly, the broth is always good, the sides have an inflection of SoCal in them and the price is right. There is a reason there is almost always a wait at this place. There is a reason that there is a good mix of young hipsters and Japanese businessmen here all the time. The reason is that this is the best Noodle shop on the west coast.
Ramen or Yakitori - BOTH GREAT – Ramen soup base is a broth that is made by boiling pork for minimum of 12 hours. The noodles are made especially for this resturant and other locations. There is a list of about 20 items that may be added for tastes from egg and bean sprouts to spicy miso and cod roe. Lunch sees the one of a SPAM roll. The robota or yakitori BBQ side offers the Japanese version of the local pub or tavern, the specials and dessert menu is produced by a kitchen headed by a trained French chef. Everyone at the resturant works to give the best service possible, they treat customers as guests in their home.
Two restaurants in one – In the Fountain Valley branch of this chain, the "cheap" ramen place is on one side. On the other lies a robata bar just out of Japan. The whole staff greets patrons with a hearty "irashaii" and promptly seats them at a table or at the bar. Order skewers or specially made Japanese "tapas" dishes that serve as your accompiament to your beverage. Winners include a grilled salmon with buttered shiitake and enoki mushrooms, the beef flap meat skewer, and the garlic skewer. Tsukemono (pickled cabbage) comes free and all-you-can-eat on the side. For dessert, try the banana egg roll with chocolate sauce and ice cream. The waitstaff is EXCELLENT!!!!!
Best RAMEN in the U.S.A.!! – I've been to tons of Ramen / Noodle shops, and Shin Sen Gumi is the best there is. This is total Old School, Hardcore, Legit, Authentic, 100% straight outta Japan.
They allow you to Totally Customize your Ramen Experience: You can choose how firm you want your Ramen noodles. How much Soup Base. How much Soup Oil. What items to exclude, etc.! Just like they do in Japan. You can get "refills" on your Ramen (one full serving!) for just $1! It's awesome.
In Japan, Ramen is a tasty, quick meal that's cheap, and Shin Sen Gumi provides all that. Their noodles are exquisite and their Tonkotsu Soup Base is fabulous! Great, feisty service, they greet you and bow and thank you when you leave. Awesome!
